Herb-Crusted Lamb with Greek Lemon Potatoes

A rosemary and garlic breadcrumb crust over rack of lamb, roasted on top of lemon potatoes so the juices fall straight into them.

Lamb

  • 1rack of lamb (8 ribs), French trimmed
  • 1 cup (60g)fresh breadcrumbs
  • 3 tbsprosemary, finely chopped
  • 2garlic cloves, crushed
  • 2 tbspDijon mustard
  • 2 tbspolive oil
  • Salt and black pepper

Potatoes

  • 2¼ lb (1kg)potatoes, quartered lengthways
  • Juice of 1 lemon
  • 2 tspdried oregano
  • 2garlic cloves, crushed
  • 1¼ cups (300ml)chicken stock
  • 3 tbspolive oil
  • 1lemon, halved

Method

  1. Heat the oven to 400°F (200°C). Put the potatoes in a roasting tray with the lemon juice, oregano, garlic, stock, olive oil and a generous amount of salt. Add the lemon halves cut side down. Roast 40 minutes.
  2. Season the lamb well. Sear it fat side down in a hot dry pan for 3–4 minutes until browned, then briefly on the other sides. Rest 5 minutes.
  3. Mix the breadcrumbs, rosemary, garlic, olive oil, salt and pepper.
  4. Brush the lamb all over with Dijon, then press the crumb mixture on firmly.
  5. Sit the lamb directly on top of the potatoes. Roast 18–20 minutes for medium-rare — internal temperature 130°F (55°C) at the thickest point.
  6. Rest 10 minutes. Not optional. Carve early and the juices run out and the pink goes with them.
  7. Carve into thick double-rib chops. Spoon the pan juices over.

Notes

  • Use a thermometer. Rack of lamb goes from pink to grey in about three minutes.
  • 135°F (57°C) for medium. Don't go past it.
  • The potatoes should be nearly done before the lamb goes in — they need the full hour.
